Miniature Italian Meatloaves


Or overgrown meatballs, whichever you prefer ;-)

Ingredients
1 lb lean ground sirloin
1 lb lean ground pork (you have to add the pork people, if you don't I'll know, and I'll come after you)
1/4 cup grated Parmesan cheese
1/4 cup Italian breadcrumbs
(All of these are to taste) Garlic powder, onion powder, Italian Seasoning, Thyme, Oregano, Salt and Pepper
1 slice of thick cut Pancetta
Marinara sauce

Preheat oven to 375. Dice pancetta and brown in olive oil. Remove and drain. Mix together the ground beef and pork and add the seasonings, bread crumb and cheese. Add the diced pancetta and form into hand sized loaves. Bake on a cooling sheet set over a baking sheet for about 30 minutes. (Use a meat thermometer to make sure the pork is done)

Top meatloaves with sauce and serve with pasta or risotto. Enjoy!
