Tortilla Soup...


I made tortilla soup the other night...thought perhaps I'd post the recipe. It may not be the most traditional recipe but it's worth a try.

Ingredients
1 tbs olive oil
1 package chicken tenderloins, cut into chunks.
1/2 yellow onion, diced
1/4 tsp fresh garlic, minced
1 box low sodium chicken broth/stock
1 can no salt added diced tomatoes with the juice (Or tomatoes mixed with chilis)
1 tsp cumin
1 tsp coriander
Queso blanco to taste
Shredded sharp cheddar to taste
chili powder, salt, & pepper to taste

Tortilla strips, yellow cheese, and sour cream to garnish.

Add oil to soup pot (I use a non-stick pot so the cheese won't burn to the bottom) over medium heat. Saute onions until translucent and season with salt and pepper. Add the garlic and the chicken, add the cumin and coriander as well as salt and pepper and chili powder and continue to cook on medium heat for about five minutes.

Add the canned tomatoes with the juice and cook for one more minute. Add the broth and bring to a boil. Once it boils, cover with a lid and lower heat to a simmer. Continue to simmer for fifteen minutes. Break off small chunks of the queso blanco and add to the soup while stirring. Add some of the yellow cheese and turn off the heat.

Pour soup into bowl. Top the soup with tortilla strips, a dollop of sour cream, and more yellow cheese. ENJOY! :-)

*If you can not find tortilla strips in the store, they are simple to make. Take 'corn' tortillas and slice into strips. Add canola oil to a pot, about an inch, heat over medium-high heat, add strips and fry until they are crispy, maybe one minute. Remove to a plate covered with a paper towel, serve immediately.)
